- 1/4 teaspoon black pepper
Wet Ingredients:
- 1 cup cold sparkling water (or cold beer)
- 1 tablespoon vinegar or lemon juice

Instructions
- Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, cornstarch, baking powder, baking soda, salt, paprika, garlic powder, and black pepper.
- Add Wet Ingredients: Stir in the cold sparkling water and vinegar (or lemon juice) until a smooth batter forms. Adjust consistency by adding more water if needed.
- Prepare Fish: Pat fish fillets dry and dust with flour.
- Fry: Heat oil to 350°F (175°C). Dip fillets in batter, fry for 4–6 minutes until golden and crispy.
- Drain and Serve: Remove fish from oil and drain on a wire rack. Serve hot with tartar sauce or lemon wedges.

- For extra crunch, use beer instead of sparkling water.
- Keep the batter cold for best results.
