Ingredients
Scale
Potatoes and Seasoning
- 1 pound small Yukon Gold or red potatoes
- 2 tablespoons olive oil
- 2 teaspoons garlic powder (or 3 cloves fresh garlic, minced)
- 1 teaspoon salt
- ½ teaspoon black pepper
Cheese and Herbs
- ½ cup grated fresh Parmesan cheese
- 2 tablespoons chopped fresh parsley
Instructions
- Preheat the oven: Preheat your oven to 425°F (220°C) to ensure it reaches the right temperature for crispy roasting.
- Prepare the potatoes: Scrub the small Yukon Gold or red potatoes clean under running water, then slice each potato in half to allow for even cooking and crispy edges.
- Season the potatoes: In a large bowl, toss the halved potatoes with olive oil, garlic powder (or fresh minced garlic), salt, and black pepper until they are fully and evenly coated with the seasoning.
- Add Parmesan cheese: Sprinkle grated fresh Parmesan cheese over the seasoned potatoes and toss again to evenly distribute the cheese, which will add a delicious crispy crust.
- Bake the potatoes: Spread the seasoned and cheese-coated potatoes in a single layer on a parchment-lined baking sheet to prevent sticking. Bake in the preheated oven for 30-35 minutes, until the potatoes are golden brown and crispy on the outside while tender inside.
- Finish and serve: Remove the potatoes from the oven and immediately sprinkle with chopped fresh parsley for a pop of color and fresh flavor before serving.
Notes
- For extra crunch, you can broil the potatoes for the last 2-3 minutes but watch carefully to prevent burning.
- Using fresh minced garlic instead of garlic powder will give a more intense garlic flavor.
- Yukon Gold potatoes are preferred for their buttery texture, but red potatoes work well too.
- Make sure to spread the potatoes in a single layer to ensure they crisp evenly.
- This recipe can be doubled for larger gatherings; just use two baking sheets.
