Fruit Filling:
- 4 cups sliced fresh or frozen peaches (peeled)
- 2 cups fresh or frozen blueberries
- 1/3 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
Cake Topping:
- 1 box (about 15 oz) yellow cake mix
- 1/2 cup unsalted butter (melted)
- Vanilla ice cream or whipped cream for serving (optional)
Instructions
- Prepare Crockpot: Lightly grease the inside of your crockpot with nonstick spray.
- Layer Fruit: Add the sliced peaches and blueberries to the crockpot. Sprinkle with sugar, lemon juice, vanilla extract, and cinnamon. Gently toss to combine.
- Add Cake Mix: Evenly sprinkle the dry cake mix over the fruit mixture—do not stir.
- Drizzle Butter: Drizzle the melted butter over the cake mix, covering as much of the surface as possible.
- Cook: Cover and cook on high for 2½ to 3 hours or on low for 4 to 5 hours, until the top is golden and the fruit is bubbling.
- Serve: Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
Notes
- You can use canned fruit in juice (not syrup), but drain it well before using.
- Spice it up with a pinch of nutmeg or use a white cake mix for a different twist.
