Meatloaf
- 2 pounds ground beef
- 1 cup plain breadcrumbs
- 1 packet (1 oz) dry French onion soup mix
- 2 large eggs
- 1/3 cup milk
- 1/4 cup ketchup
- 1 tablespoon Worcestershire sauce
- 1/2 teaspoon black pepper
Onions and Topping
- 1 1/2 cups sliced yellow onions
- 1 tablespoon olive oil
- 6 slices Swiss cheese
- Chopped fresh parsley for garnish (optional)
Instructions
- Sauté Onions: In a large skillet over medium heat, heat the olive oil and sauté the sliced onions until softened and golden brown, about 10 minutes. Remove from heat and set aside to cool slightly.
- Mix Meatloaf Ingredients: In a large bowl, combine the ground beef, breadcrumbs, French onion soup mix, eggs, milk, ketchup, Worcestershire sauce, and black pepper. Mix gently until just combined, taking care not to overwork the meat mixture to keep the meatloaf tender.
- Shape and Place in Slow Cooker: Shape the meat mixture into a loaf shape and place it in the bottom of a greased slow cooker. Evenly top the meatloaf with the sautéed onions.
- Cook Meatloaf: Cover and cook on low for 6 to 7 hours, or on high for 3 to 4 hours, until the meatloaf is fully cooked and the internal temperature reaches 160°F (71°C).
- Add Cheese and Melt: In the last 15 minutes of cooking, layer the Swiss cheese slices over the top of the meatloaf. Cover again and allow the cheese to melt completely.
- Serve: Slice the meatloaf and serve hot. Garnish with chopped fresh parsley if desired for a fresh touch.
