  • 1 teaspoon vanilla extract

Additional Ingredients:

  • 1 1/2 cups finely grated carrots
  • 1/2 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts (optional)

For Cream Cheese Frosting:

  • 8 ounces cream cheese, softened
  • 1/4 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Preheat Oven: Preheat oven to 350°F and prepare a 9×13-inch baking pan.
  2. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
  3. Combine Wet Ingredients: In a large bowl, beat eggs, granulated sugar, and brown sugar until smooth. Mix in oil, applesauce, and vanilla.
  4. Blend Batter: Stir in dry ingredients, then fold in carrots, pineapple, and walnuts (if using). Pour into the pan.
  5. Bake: Bake for 25–30 minutes until a toothpick inserted in the center comes out clean. Cool.
  6. Make Frosting: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and salt, beat until creamy.
