- 2 large eggs
- 3/4 cup granulated sugar

Additional Ingredients:
- 1 1/2 cups finely grated carrots
- 1/2 cup crushed pineapple, drained
- 1/2 cup chopped walnuts (optional)
For Cream Cheese Frosting:
- 8 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
- Pinch of salt
Instructions
- Preheat Oven: Preheat oven to 350°F and prepare a 9×13-inch baking pan.
- Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger.
- Combine Wet Ingredients: In a large bowl, beat eggs, granulated sugar, and brown sugar until smooth. Mix in oil, applesauce, and vanilla.
- Blend Batter: Stir in dry ingredients, then fold in carrots, pineapple, and walnuts (if using). Pour into the pan.
- Bake: Bake for 25–30 minutes until a toothpick inserted in the center comes out clean. Cool.
- Make Frosting: Beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and salt, beat until creamy.
- Frost Bars: Spread frosting over cooled bars. Chill before slicing into squares.
