Description

For the crust:

  • 1 and 1/2 cups chocolate cookie crumbs
  • 1/4 cup granulated sugar
  • 1/3 cup unsalted butter, melted

For the filling:

  • 3 packages (8 ounces each) cream cheese, softened
  • 1 cup granulated sugar
  • 1/2 cup sour cream
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 1/2 cup semi-sweet chocolate chips, melted and slightly cooled
  • 1/2 cup strawberry preserves or purée

Instructions

  1. Preheat the oven and prepare the crust: Preheat the oven to 325°F (160°C) and grease a 9-inch springform pan. Mix chocolate cookie crumbs, sugar, and melted butter. Press into the pan and bake for 10 minutes. Let cool.
  2. Make the filling: Beat cream cheese until smooth. Add sugar, sour cream, and vanilla. Mix well. Add eggs one at a time, beating after each. Pour half over the crust. Stir melted chocolate into the remaining filling and pour over the plain layer. Swirl strawberry preserves on top.
  3. Bake the cheesecake: Bake for 55–65 minutes until set but slightly jiggly. Turn off the oven and let the cheesecake cool inside with the door slightly open for 1 hour. Remove, cool to room temperature, then chill for at least 4 hours or overnight before serving.

Notes

  • For the best swirl effect, use a thicker strawberry preserve or a well-strained purée.
  • Fresh strawberries can be puréed and sweetened to taste if desired.
