Description

Decadent Strawberry Cheesecake Quesadillas combine creamy sweetened cream cheese with fresh diced strawberries, sandwiched between buttery, crispy tortillas. Served warm and topped with a cinnamon-sugar blend, these quesadillas are perfect for a quick dessert or indulgent snack, with a delightful strawberry sauce for dipping.

Ingredients

Scale

Cream Cheese Mixture

  • 1/2 cup Cream Cheese, softened
  • 2 tbsp Sugar
  • 1/2 tsp Vanilla Extract
  • 1/2 cup Strawberries, diced

Quesadillas & Topping

  • 4 Tortillas (6 inch)
  • 2 tbsp Butter, softened
  • 1 tsp Sugar (for topping)
  • 1/2 tsp Cinnamon (for topping)

Dipping Sauce

  • Strawberry sauce for dipping (quantity as desired)

Instructions

  1. Prepare Cream Cheese Mixture: In a mixing bowl, combine the softened cream cheese, 2 tablespoons of sugar, and vanilla extract. Beat together until smooth to create a creamy base.
  2. Add Strawberries: Dice the fresh strawberries and gently fold them into the cream cheese mixture until evenly combined, ensuring a fruity, creamy filling.
  3. Spread on Tortilla: Take one tortilla and spread half of the strawberry cream cheese mixture evenly over it.
  4. Heat Butter in Pan: Heat 1 teaspoon of butter in a pan over medium-high heat until melted and hot.
  5. Place Tortilla in Pan: Place the cream cheese spread tortilla in the pan, cream cheese side up, ready for sandwiching.
  6. Top with Second Tortilla: Spread an additional teaspoon of butter on the second tortilla and place it butter side up on top of the first tortilla to form a sandwich.
  7. Cook Both Sides: Cook the quesadilla for 2-3 minutes on each side until both sides are crispy and golden brown.
  8. Sprinkle Cinnamon Sugar: Mix together the 1 teaspoon sugar and 1/2 teaspoon cinnamon, then sprinkle this cinnamon sugar blend over the cooked quesadilla.
  9. Repeat or Cook Simultaneously: Repeat the procedure for the second quesadilla. Alternatively, use a griddle to cook both quesadillas simultaneously for efficiency.
  10. Rest and Serve: Remove the quesadillas from heat and let them sit for 2 minutes. Then slice into wedges and serve warm with strawberry sauce for dipping.

Notes

  • Ensure the cream cheese is softened to make spreading easier and smoother mixing.
  • Use fresh, ripe strawberries for the best flavor and texture.
  • Be careful not to overcook the quesadillas; they should be crispy but not burnt.
  • Strawberry sauce can be store-bought or homemade for dipping, depending on preference.
  • This recipe is best served immediately to enjoy the warm, creamy texture.
