Ingredients
Scale
Meat and Seasoning
- 1 pound ground beef
- 1 tablespoon olive oil (if needed)
- 1 packet taco seasoning mix (or 2 tablespoons homemade)
- 1/2 cup water
Vegetables and Toppings
- 1 head romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1/2 cup canned black beans, rinsed and drained
- 1/2 cup canned corn, drained
- 1/4 cup diced red onion
- 1 avocado, diced
Dairy and Cheese
- 1 cup shredded cheddar cheese
Crunch and Dressing
- 2 cups Nacho Cheese Doritos, lightly crushed
- 1/2 cup Catalina or ranch dressing
Instructions
- Cook the Ground Beef: In a skillet over medium heat, cook the ground beef until browned and fully cooked. Drain any excess fat if necessary to keep the salad from becoming greasy.
- Season the Meat: Add the taco seasoning mix and 1/2 cup water to the cooked beef. Stir well and simmer for 4–5 minutes until the sauce thickens slightly. Remove from heat and allow the meat to cool slightly.
- Prepare the Salad Base: In a large mixing bowl, combine the chopped romaine lettuce, cherry tomatoes, shredded cheddar cheese, black beans, corn, diced red onion, and diced avocado. Toss gently to mix all fresh ingredients evenly.
- Add the Seasoned Beef: Incorporate the slightly cooled taco meat into the salad mixture. Toss together gently to combine all components without mashing the avocado or breaking down the veggies.
- Add Doritos and Dressing: Just before serving, sprinkle the crushed Nacho Cheese Doritos over the salad and drizzle with your choice of Catalina or ranch dressing. Toss gently one last time to coat the salad evenly while preserving the crunch of the chips.
- Serve Immediately: Serve the salad right away to enjoy the maximum freshness and crisp texture of the Doritos.
Notes
- Add jalapeños or a splash of hot sauce to the salad for an extra kick of heat.
- Swap Catalina dressing for ranch for a creamier taste, or use Greek yogurt mixed with taco seasoning for a lighter alternative.
- For best texture, enjoy the salad immediately so the Doritos remain crispy and do not get soggy.
