Description

This comforting and flavorful Fish Congee recipe features creamy rice porridge cooked in chicken broth with tender white fish, shiitake mushrooms, and fresh ginger. Prepared in an Instant Pot, it’s a warm, soothing bowl perfect for any time you crave a cozy meal with delicate umami and aromatic flavors.

Ingredients

Scale

Base Ingredients

  • 1 cup uncooked short or medium grain rice
  • 8 cups chicken broth
  • 2 slices ginger
  • 6 shiitake mushrooms
  • 1/2 teaspoon sea salt

Fish and Marinade

  • 8 oz white fish (cod or tilapia)
  • 2 teaspoons shaoxing wine
  • 2 teaspoons light soy sauce
  • 1 teaspoon grated ginger
  • 1/4 teaspoon white pepper
  • 1/4 teaspoon sea salt

Garnishes & Finishing Touches

  • 2 green onions, chopped
  • Soy sauce (to taste)
  • Sesame oil (to taste)
  • Additional green onions for garnish

Instructions

  1. Rehydrate Mushrooms: Place dried shiitake mushrooms in a large bowl and cover with warm water. Let them soak until soft, about 20 minutes, then drain and slice thinly.
  2. Combine Ingredients in Instant Pot: Add uncooked rice, chicken broth, ginger slices, and rehydrated mushrooms into the Instant Pot. Close the lid, set to sealing, and select the porridge function for 20 minutes.
  3. Marinate the Fish: While the congee cooks, combine the white fish with shaoxing wine, light soy sauce, grated ginger, white pepper, and sea salt. Let marinate for at least 10 minutes to develop flavor.
  4. Finish the Congee: When cooking is complete, allow pressure to release naturally for 10 minutes before carefully removing the lid. Switch the Instant Pot to sauté mode and add the marinated fish and chopped green onions. Cook until the fish turns opaque and flakes easily, about 2 minutes.
  5. Serve Warm: Ladle the hot congee into bowls. Drizzle with soy sauce and sesame oil according to taste, then sprinkle with additional chopped green onions for a fresh finish. Serve immediately.

Notes

  • Use short or medium grain rice for a creamier, more traditional congee texture.
  • Homemade chicken broth adds deeper flavor, but store-bought can be used for convenience.
  • Adjust soy sauce and sesame oil amounts to your taste preferences for saltiness and richness.
  • The porridge function on Instant Pot is ideal for slow simmering rice without sticking or burning.
  • White fish such as cod or tilapia works best due to its mild flavor and flaky texture.
