Description

A flavorful and crunchy Dorito Taco Salad combining seasoned ground beef with fresh vegetables, beans, cheddar cheese, and a zesty dressing, topped with crispy Nacho Cheese Doritos for the perfect Tex-Mex meal that’s quick to prepare and ideal for potlucks or family dinners.

Ingredients

Scale

Meat and Seasoning

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 2/3 cup water

Salad

  • 1 large head romaine or iceberg lettuce, chopped
  • 1 1/2 cups cherry tomatoes, halved
  • 1 cup shredded cheddar cheese
  • 1/2 cup sliced black olives (optional)
  • 1/2 cup diced red onion
  • 1 can kidney beans or black beans, rinsed and drained

Toppings and Dressing

  • 2 cups Nacho Cheese Doritos, lightly crushed
  • 3/4 cup Catalina or ranch dressing

Instructions

  1. Cook the Beef: In a skillet over medium heat, brown the ground beef thoroughly. Once cooked, drain any excess fat to reduce greasiness.
  2. Season the Meat: Add the taco seasoning mix and 2/3 cup water to the browned beef. Stir well and let it simmer for about 5 minutes, or until the mixture thickens. Remove from heat and allow it to cool slightly to avoid wilting the salad greens.
  3. Prepare the Salad Base: In a large salad bowl, combine the chopped lettuce, halved cherry tomatoes, shredded cheddar cheese, sliced black olives (if using), diced red onion, and rinsed beans. Toss these ingredients gently to mix evenly.
  4. Add the Meat: Incorporate the slightly cooled taco meat into the salad bowl. Toss all ingredients together ensuring an even distribution of flavors.
  5. Final Touches: Just before serving, add the crushed Doritos to the salad for crunch. Drizzle the Catalina or ranch dressing over the top and toss gently once more to coat the salad ingredients evenly without breaking the chips.

Notes

  • For extra creaminess and flavor, add avocado slices or a dollop of sour cream.
  • If preparing the salad ahead of time, keep the Doritos and dressing separate and add them right before serving to maintain chip crunchiness.
