  • 8 oz wide egg noodles
  • 2 cups frozen mixed vegetables (peas and carrots)

Sauce & Cheese

  • 1 can cream of chicken soup (approximately 10.5 oz)
  • 1 cup low-sodium chicken broth
  • 1 cup sour cream
  • 2 cups shredded cheese (cheddar and mozzarella, divided)

Instructions

  1. Preheat the oven: Set your oven to 350°F (175°C) to prepare it for baking the casserole later.
  2. Cook the noodles: Boil the wide egg noodles in salted water until al dente, about 8 minutes. Drain and set aside to cool slightly.
  3. Cook and shred the chicken: Season the chicken breasts with salt and pepper, then cook them in a skillet over medium heat until golden brown and cooked through, approximately 6-7 minutes per side. Allow the chicken to cool slightly before shredding it into bite-sized pieces.
  4. Mix the casserole ingredients: In a large mixing bowl, combine the cooked noodles, shredded chicken, cream of chicken soup, sour cream, frozen mixed vegetables, garlic powder, onion powder, and half of the shredded cheese. Stir well to combine all the ingredients evenly.
  5. Assemble the casserole: Grease a 9×13-inch baking dish and pour the mixture into it, spreading it evenly. Sprinkle the remaining shredded cheese on top to create a cheesy crust.
  6. Bake the casserole: Place the baking dish in the preheated oven and bake for 30-35 minutes, until the casserole is bubbly and the cheese on top is golden brown.
