  • 1 1/2 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 large egg
  • 3/4 cup almond flour
  • 2 tablespoons coconut flour
  • 1 tablespoon baking powder

For the Filling:

  • 2 tablespoons butter (melted)
  • 2 tablespoons granulated erythritol or monk fruit sweetener
  • 1 tablespoon cinnamon

For the Icing:

  • 2 oz cream cheese (softened)
  • 2 tablespoons powdered erythritol
  • 12 tablespoons heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat and prepare baking dish: Preheat your oven to 375°F (190°C) and line a baking dish with parchment paper to prevent sticking and ensure even baking.
  2. Melt cheeses and form dough: In a microwave-safe bowl, melt the shredded mozzarella and cream cheese together in 30-second intervals, stirring between each until smooth. Add the egg, almond flour, coconut flour, and baking powder, mixing until a dough forms. If needed, knead the dough slightly with oiled hands to bring it together.
  3. Roll and fill dough: Place the dough between two sheets of parchment paper. Roll it out into a rectangle about 1/4 inch thick. Brush the surface with melted butter, then evenly sprinkle the granulated erythritol and cinnamon over the dough.
  4. Shape and slice: Carefully roll the dough into a log shape using the parchment paper to guide it. Slice the log into 8 equal rolls and place them cut side up into the prepared baking dish.
  5. Bake the rolls: Bake in the preheated oven for 15–18 minutes until the rolls are puffed and golden brown on top.
  6. Prepare the icing: While the rolls bake, whisk together the softened cream cheese, powdered erythritol, vanilla extract, and 1 to 2 tablespoons of heavy cream until smooth and creamy.
  7. Finish and serve: Allow the cinnamon rolls to cool slightly to avoid melting the icing completely. Spread the prepared icing generously on top of the warm rolls and serve immediately for the best taste.
