Salmon Wellingtons:

  • 2 (6-ounce) skinless salmon fillets
  • 1 sheet puff pastry, thawed
  • 2 tablespoons olive oil

Spinach-Cream Cheese Mixture:

  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 4 ounces cream cheese, softened
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste

For Assembly:

  • 1 egg (for egg wash)
  • 1 tablespoon water

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Sauté the spinach: In a skillet, heat olive oil over medium heat and sauté the garlic for 30 seconds. Add spinach and cook until wilted, about 2–3 minutes. Remove from heat and let cool slightly.
  3. Prepare the cream cheese mixture: In a small bowl, mix the cream cheese, Dijon mustard, lemon zest, salt, and pepper. Stir in the cooled spinach mixture.
  4. Assemble the Wellingtons: Roll out the puff pastry and cut it in half to form two equal rectangles. Spread half of the spinach-cream cheese mixture in the center of each rectangle. Place a salmon fillet on top, season with salt and pepper, and fold the pastry over the salmon, sealing the edges well. Flip each Wellington seam-side down and place on the baking sheet. Score the tops lightly with a knife.
  5. Bake: Beat the egg with water and brush the tops of the pastry. Bake for 20–25 minutes or until the pastry is golden and puffed. Let rest for 5 minutes before serving.
