  • 1 (15 oz) can corn, drained
  • 1 (15 oz) can diced tomatoes
  • 1 (10 oz) can Rotel (diced tomatoes with green chilies)

Seasonings and Broth:

  • 1 (1 oz) packet taco seasoning
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 2 cups beef or chicken broth
  • Salt and pepper to taste

Optional Toppings:

  • Shredded cheese
  • Sour cream
  • Tortilla chips
  • Green onions

Instructions

  1. Saute Aromatics: Heat olive oil in a pot, sauté onion until soft, then add garlic.
