Description

Delicious and healthy Egg White Bites packed with red bell pepper, fresh spinach, and creamy feta cheese. These protein-rich bites are perfect for a quick breakfast or snack, easy to prepare with simple ingredients, and suitable for low-carb, vegetarian, and gluten-free diets.

Ingredients

Scale

Egg Mixture

  • 1 1/2 cups liquid egg whites (or whites from about 10 large eggs)
  • 1/2 cup diced red bell pepper
  • 1/2 cup chopped fresh spinach
  • 1/3 cup crumbled feta cheese
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and black pepper to taste

For Greasing

  • Olive oil spray

Instructions

  1. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C) and lightly grease a 12-cup muffin tin with olive oil spray to prevent sticking.
  2. Mix Ingredients: In a medium bowl, combine the liquid egg whites, diced red bell pepper, chopped spinach, crumbled feta cheese, garlic powder, onion powder, salt, and black pepper. Whisk thoroughly until evenly mixed and the ingredients are well incorporated.
  3. Fill Muffin Cups: Pour the egg mixture evenly into the prepared muffin tin cups, filling each about 3/4 full to allow room for the bites to expand while baking.
  4. Bake: Place the muffin tin in the preheated oven and bake for 20 to 25 minutes, or until the egg bites are fully set and lightly golden on top.
  5. Cool and Serve: Let the egg bites cool for a few minutes before removing them from the pan. Serve warm for immediate enjoyment or let cool completely and refrigerate for convenient grab-and-go breakfasts.

Notes

  • Customize by adding other vegetables such as mushrooms or zucchini for variety.
  • For a kick of heat, add a pinch of chili flakes or a dash of hot sauce to the egg mixture before baking.
  • These egg bites freeze well; reheat them in the microwave for 30–60 seconds for a quick meal.
