- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 4 cups chicken broth
- 1 tablespoon soy sauce
- 1 tablespoon chili garlic sauce
- 1 teaspoon sriracha or more to taste
- 1 teaspoon red pepper flakes
- 1/2 teaspoon salt or to taste
- 1/4 teaspoon black pepper
Vegetables & Garnishes
- 1 cup sliced mushrooms
- 1 cup baby spinach
- 2 green onions, sliced
- 1 soft boiled egg per serving, optional
Carbohydrates
- 2 packs ramen noodles, seasoning packets discarded
Instructions
- Cook the Chicken: Heat sesame oil in a large pot over medium heat. Add the thinly sliced chicken breasts, seasoned with salt and black pepper. Cook for 4 to 5 minutes until the chicken is lightly browned and cooked through.
- Add Aromatics: Stir in the minced garlic and grated ginger, cooking for about 30 seconds until fragrant to enhance the flavor base.
- Prepare the Broth: Pour in the chicken broth and bring it to a gentle boil. Stir in soy sauce, chili garlic sauce, and sriracha to infuse the broth with spicy, savory flavors.
- Simmer with Mushrooms: Add the sliced mushrooms to the pot and simmer for 5 minutes, allowing the mushrooms to soften and infuse the broth further.
- Cook the Noodles: Add the ramen noodles and cook according to the package directions, approximately 3 to 4 minutes, so that the noodles become tender but still slightly springy.
- Add Spinach: Stir in the baby spinach during the last minute of cooking until it wilts and blends into the soup.
- Adjust Heat and Serve: Taste the broth and add extra sriracha if desired for more heat. Ladle the ramen into bowls, then top with sliced green onions, red pepper flakes, and a soft boiled egg if using. Serve hot.
Notes
- For extra heat, add a dash of chili oil before serving.
- You can substitute rotisserie chicken for a quicker cooking option.
- Adjust spice levels to preference by increasing or reducing chili garlic sauce and sriracha.
