Sauce:

  • 1 tablespoon flour
  • 1 cup dry white wine (such as Chardonnay)
  • 1 cup low-sodium chicken broth
  • 1 teaspoon fresh thyme (or ½ tsp dried)
  • 1 teaspoon fresh rosemary (or ½ tsp dried)
  • 1 bay leaf
  • ½ cup heavy cream
  • Chopped parsley for garnish

Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Sear Chicken: Season chicken and sear in a skillet. Transfer to a plate.
  3. Cook Vegetables: Sauté onion, carrots, and mushrooms. Add garlic, tomato paste, and flour.
  4. Deglaze Pan: Pour in white wine and broth. Add herbs and simmer.
  5. Bake: Return chicken to the pan, cover, and bake for 35–40 minutes.
  6. Finish: Stir in cream, simmer, and garnish with parsley before serving.
