- 8 oz cremini or white mushrooms (sliced)
- 4 garlic cloves (minced)
Sauce:
- 1 tablespoon tomato paste
- 1 tablespoon flour
- 1 cup dry white wine (such as Chardonnay)
- 1 cup low-sodium chicken broth
- 1 teaspoon fresh thyme (or ½ tsp dried)
- 1 teaspoon fresh rosemary (or ½ tsp dried)
- 1 bay leaf
- ½ cup heavy cream
- Chopped parsley for garnish
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C).
- Sear Chicken: Season chicken and sear in a skillet. Transfer to a plate.
- Cook Vegetables: Sauté onion, carrots, and mushrooms. Add garlic, tomato paste, and flour.
- Deglaze Pan: Pour in white wine and broth. Add herbs and simmer.
- Bake: Return chicken to the pan, cover, and bake for 35–40 minutes.
- Finish: Stir in cream, simmer, and garnish with parsley before serving.
