  • 2 cups chopped fresh spinach or kale
  • 2 tablespoons fresh parsley, chopped
  • juice of 1/2 lemon

Chicken Option:

  • 2 cups shredded cooked chicken

Instructions

  1. Prepare the Soup Base: Heat olive oil in a large pot. Sauté onion, carrots, and celery until softened. Add garlic, thyme, rosemary, smoked paprika, and bay leaf.
  2. Cook the Lentils: Add lentils, broth, tomatoes, salt, and pepper. Simmer until lentils are tender.
  3. Finish the Soup: Stir in chicken if using, then add spinach or kale, parsley, and lemon juice. Simmer until greens are wilted.
