- 2 cups chopped fresh spinach or kale
- 2 tablespoons fresh parsley, chopped

Instructions
- Prepare the Soup Base: Heat olive oil in a large pot. Sauté onion, carrots, and celery until softened. Add garlic, thyme, rosemary, smoked paprika, and bay leaf.
- Cook the Lentils: Add lentils, broth, tomatoes, salt, and pepper. Simmer until lentils are tender.
- Finish the Soup: Stir in chicken if using, then add spinach or kale, parsley, and lemon juice. Simmer until greens are wilted.
- Serve: Adjust seasoning and serve hot, optionally with crusty bread.
