Scale
Main Ingredients
- 2 cups cold mashed potatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked bacon bits (optional)
- 2 green onions, finely chopped
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1 large egg
- 1/4 cup breadcrumbs
Breading Station
- 1/2 cup all-purpose flour
- 2 eggs, beaten
- 3/4 cup breadcrumbs (remaining)
For Frying
- Vegetable oil (2 to 3 inches for deep frying)
Instructions
- Prepare the potato mixture: In a large bowl, combine the cold mashed potatoes with shredded cheddar cheese, cooked bacon bits (if using), finely chopped green onions, garlic powder, black pepper, and 1 beaten egg. Stir in 1/4 cup breadcrumbs to help bind the mixture together.
- Shape the balls: Scoop about 1 to 2 tablespoons of the potato mixture, roll it into a ball with your hands, and place the balls on a tray. Chill in the refrigerator for 20 to 30 minutes to firm up the mixture.
- Set up breading station: Prepare three separate bowls: one with all-purpose flour, one with beaten eggs, and one with the remaining breadcrumbs (3/4 cup).
- Bread the potato balls: Roll each chilled potato ball first in the flour, then dip it into the beaten eggs, and finally coat it thoroughly with breadcrumbs. Ensure an even coating to achieve a crispy crust.
- Heat oil for frying: Pour 2 to 3 inches of vegetable oil into a deep skillet or saucepan and heat it to 350°F (175°C), using a thermometer to maintain the temperature.
- Fry the balls: Fry the prepared potato balls in batches—do not overcrowd the pan—for 2 to 3 minutes until they turn golden brown and crispy on all sides.
- Drain and serve: Remove the fried potato balls with a slotted spoon and place them on paper towels to drain excess oil. Serve hot with your favorite dipping sauces like sour cream, ranch, or spicy mayo.
Notes
- Use leftover mashed potatoes for quicker preparation and avoid making potatoes fresh just for this recipe.
- For extra crispiness, substitute regular breadcrumbs with panko breadcrumbs.
- To reduce fat, you can bake or air fry the potato balls instead of deep frying.
- Serve with sour cream, ranch dressing, or spicy mayo for delicious dipping options.
