  • 4 tablespoons unsalted butter (divided)
  • 1 tablespoon olive oil
  • 8 ounces linguine pasta
  • 1/2 cup grated Parmesan cheese (for pasta)
  • 1/4 cup heavy cream
  • 1/2 cup pasta cooking water (reserved)
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Extra Parmesan for serving

Instructions

  1. Prepare the Meatballs: In a large bowl, mix ground beef, breadcrumbs, 1/4 cup Parmesan, egg, half the minced garlic, parsley, salt, and pepper. Shape into 1-inch meatballs.
  2. Cook the Meatballs: Brown meatballs in a skillet with olive oil and 2 tablespoons butter. Set aside.
  3. Make the Sauce: In the same skillet, melt remaining butter, sauté garlic, add cream and pasta water, then simmer.
  4. Cook the Linguine: Cook linguine, reserving pasta water. Toss cooked pasta with Parmesan in the skillet, add meatballs, and coat in sauce.
