Instructions

  1. Heat the fats: In a large skillet over medium heat, warm the olive oil and unsalted butter together until melted and combined.
  2. Cook the mushrooms: Add the sliced mushrooms to the skillet and cook undisturbed for 3 to 4 minutes to let them brown nicely on one side.
  3. Continue cooking mushrooms: Stir the mushrooms, then cook for another 4 to 5 minutes until they attain a golden color and most of the liquid has evaporated.
  4. Add aromatics: Stir in the minced garlic and thyme leaves, sautéing for 1 to 2 minutes until fragrant but not burned.
  5. Season: Season the mushroom mixture with salt and freshly ground black pepper to taste, adjusting as needed.
  6. Toast the bread: While cooking the mushrooms, toast the bread slices until they are golden brown and crisp on the outside.
  7. Assemble and serve: Spoon the garlic mushroom mixture evenly over each toasted bread slice. Optionally, sprinkle with grated Parmesan, crumbled goat cheese, and garnish with chopped parsley. Serve warm.
