Instructions
- Prepare the Marinade: In a mixing bowl or a sealable plastic bag, combine fresh or dried oregano, minced garlic, olive oil, lemon juice, cumin powder, chopped parsley, chili flakes, salt, and freshly cracked black pepper. Mix thoroughly to create a well-blended marinade.
- Marinate the Chicken: Cut the chicken breast or thigh meat into 1-2 inch pieces. Place the chicken pieces into the marinade and toss gently to ensure all pieces are evenly coated. Cover the bowl or seal the bag and refrigerate for at least 20-30 minutes. For enhanced flavor, marinate overnight.
- Grill the Chicken: Preheat your grill or grill pan over medium-high heat. Lightly spray with oil to prevent sticking. Thread the marinated chicken pieces onto skewers or place directly on the grill pan. Grill for approximately 10-12 minutes, turning occasionally, until the chicken is cooked through and develops a nice char on the outside.
