Celebrate Groundhog Day with these delightful and playful Groundhog Day Cupcakes. Featuring moist chocolate cupcakes topped with rich chocolate frosting and decorated to look like adorable groundhogs peeking out of their burrows, these cupcakes are perfect for kids’ parties and festive dessert tables.

Ingredients

Scale

Cake

  • 1 box chocolate cake mix (ingredients as listed on box: eggs, oil, water)

Frosting & Decoration

  • 1 cup chocolate frosting
  • 12 chocolate sandwich cookies, crushed (for “dirt”)
  • 24 mini marshmallows
  • 24 candy eyes
  • 12 chocolate-covered almonds or oval chocolate candies (for noses)
  • 12 Whoppers or malted milk balls (for heads)
  • Small pink candies or heart sprinkles (for ears or cheeks)
  • Melted chocolate or icing (for assembly and details)

Instructions

  1. Preheat and prepare muffin tin: Preheat your oven as directed on the chocolate cake mix box. Line a 12-cup muffin tin with cupcake liners to prepare for baking.
  2. Mix and bake cupcakes: Prepare the chocolate cake batter according to the instructions on the box using the required eggs, oil, and water. Divide the batter evenly among the prepared cupcake liners. Bake for approximately 18-22 minutes, or until a toothpick inserted into the center comes out clean. Remove from oven and allow cupcakes to cool completely.
  3. Frost cupcakes: Once the cupcakes are fully cooled, spread a generous layer of chocolate frosting on top of each cupcake using a knife or spatula.
  4. Create ‘dirt’ topping: Sprinkle or gently press crushed chocolate sandwich cookies over the chocolate frosting to simulate dirt, covering the entire cupcake surface.
  5. Assemble groundhog faces: Press a Whopper candy into the center of each frosted cupcake to resemble the groundhog’s head emerging from the dirt.
  6. Add facial features: Attach two mini marshmallows to the front base of each Whopper to create teeth, using a small dab of melted chocolate or frosting as glue. Then, attach candy eyes above the teeth and place a chocolate-covered almond or oval chocolate candy as the nose positioned between the eyes.
  7. Decorate ears/cheeks: Use small pink candies or heart sprinkles to add ears or cheeks to each groundhog face as desired.
  8. Finalize details: Use melted chocolate or black icing to pipe or draw a mouth and any other facial details on the groundhog faces for added character.
  9. Serve and enjoy: Repeat for all cupcakes and serve these whimsical treats at your Groundhog Day celebration.
