  • 1 tablespoon olive oil
  • 1 pound boneless skinless chicken breasts (cut into 1-inch pieces)
  • Salt and pepper to taste
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried Italian seasoning

Vegetables:

  • 1 red bell pepper (chopped)
  • 1 zucchini (sliced)
  • 1 yellow squash (sliced)
  • 1 cup broccoli florets
  • 1/2 small red onion (sliced)
  • 2 cloves garlic (minced)

Additional:

  • Juice of 1/2 lemon
  • Chopped fresh parsley for garnish (optional)

Instructions

  1. Heat the Skillet: Heat olive oil in a large skillet over medium-high heat.
  2. Cook Chicken: Season and cook the chicken until golden brown and cooked through. Remove from skillet.
  3. Cook Vegetables: In the same skillet, cook bell pepper, zucchini, squash, broccoli, and red onion until tender-crisp. Add garlic.
