Chicken:
- 1 tablespoon olive oil
- 1 pound boneless skinless chicken breasts (cut into 1-inch pieces)
- Salt and pepper to taste
- 1 teaspoon garlic powder
- 1/2 teaspoon dried Italian seasoning
Vegetables:
- 1 red bell pepper (chopped)
- 1 zucchini (sliced)
- 1 yellow squash (sliced)
- 1 cup broccoli florets
- 1/2 small red onion (sliced)
- 2 cloves garlic (minced)
Additional:
- Juice of 1/2 lemon
- Chopped fresh parsley for garnish (optional)
Instructions
- Heat the Skillet: Heat olive oil in a large skillet over medium-high heat.
- Cook Chicken: Season and cook the chicken until golden brown and cooked through. Remove from skillet.
- Cook Vegetables: In the same skillet, cook bell pepper, zucchini, squash, broccoli, and red onion until tender-crisp. Add garlic.
- Combine: Return chicken to the skillet, toss everything, add lemon juice, and stir to combine.
- Serve: Garnish with parsley if desired and serve warm.
