Ingredients
Scale
Rice
- 2 cups sushi rice (uncooked, short grain)
- ¼ cup rice vinegar
- 1 tablespoon sugar
- 1 teaspoon salt
Crab Mixture
- 1 lb imitation crab (shredded)
- 8 oz cream cheese (softened)
- ½ cup mayonnaise (preferably Japanese)
- 1 tablespoon sriracha (adjust to taste)
Toppings & Garnishes
- 2 tablespoons furikake
- 2 tablespoons green onions (chopped)
- 1 tablespoon sesame seeds (toasted, optional)
- 1 pack nori sheets (cut into squares)
- Soy sauce (to taste)
- ½ cup cucumber (diced)
- ½ cup avocado (diced, add after baking)
- 2 tablespoons masago (optional for garnish)
- Extra spicy mayo (to taste)
Instructions
- Prepare Sushi Rice: Rinse the sushi rice thoroughly under cold water to remove excess starch, then cook it according to the package instructions until fluffy. While still warm, mix in rice vinegar, sugar, and salt evenly to season the rice and enhance its flavor.
- Make Crab Mixture: In a large bowl, combine the shredded imitation crab, softened cream cheese, Japanese mayonnaise, and sriracha. Mix thoroughly until the mixture is creamy and well blended.
- Assemble the Bake: Grease a baking dish lightly, then transfer the seasoned rice into it. Press the rice firmly and evenly to create a solid base layer.
- Add Crab Layer: Spread the crab mixture evenly on top of the rice layer, smoothing it out for consistent coverage across the surface.
- Top with Seasonings: Sprinkle furikake, chopped green onions, and toasted sesame seeds generously over the crab mixture to add extra flavor and texture.
- Bake the Dish: Preheat the oven to 350°F (175°C). Place the baking dish inside and bake for about 20 minutes, until the top is golden brown and bubbling slightly.
- Cool and Serve: Remove from the oven and allow the sushi bake to cool for a few minutes. Serve warm with nori sheets, soy sauce, diced cucumber, avocado added fresh, and optional garnishes like masago and extra spicy mayo for dipping or topping.
Notes
- Use Japanese mayonnaise for the authentic flavor and creaminess.
- Adjust sriracha amount based on your preferred spice level.
- Toasting sesame seeds enhances their nutty flavor.
- Add avocado only after baking to keep it fresh and creamy.
- Furikake is a Japanese seasoning blend which can be found in Asian grocery stores or online.
- This recipe works well as a make-ahead dish; reheat gently before serving.
