Instructions
- Prepare the Mint-Infused Cream: In a small pot, whisk together the whole milk, heavy cream, granulated sugar, sea salt, and egg yolks until fully combined. Add the fresh mint leaves to the mixture.
- Heat and Steep Mint: Heat the mixture over medium heat, whisking often to prevent curdling, until it gently simmers. Remove the pot from the heat and allow the mint leaves to steep for 1 hour to infuse their flavor into the cream.
- Strain and Chill: Strain the cream through a fine-mesh sieve into a bowl to remove the mint leaves. Cover and refrigerate the cream until thoroughly chilled.
- Ice Cream Maker Method – Churn the Ice Cream: Pour the chilled cream mixture into your ice cream maker. Churn for about 30 minutes until the ice cream is creamy and thick.
- Add Mint Chocolate: Add the chopped mint chocolate to the ice cream maker and churn for an additional minute to incorporate the chunks evenly.
- No-Churn Method – Freeze and Stir: Pour the chilled cream into a large baking dish and place it in the freezer.
- Manual Stirring: Every 30 minutes, remove the dish from the freezer and use a fork to scrape and stir the frozen edges back into the mixture. Repeat this process for at least 2 hours until the ice cream is creamy and fully frozen.
- Mix in Mint Chocolate: Just before serving, stir the chopped mint chocolate into the no-churn ice cream to distribute the chocolate pieces evenly.
