  • 2 cups baby bok choy or spinach
  • 1/2 cup sliced mushrooms (optional)
  • Salt and pepper, to taste
  • Green onions and fresh cilantro, for garnish

Instructions

  1. Prepare the wontons: In a mixing bowl, combine ground chicken, finely chopped green onions, minced garlic, soy sauce, sesame oil, grated ginger, and white pepper. Mix thoroughly until well incorporated to create the filling.
  2. Assemble the wontons: Place a small spoonful of the chicken mixture in the center of each wonton wrapper. Moisten the edges with water to help seal. Fold the wrapper into a triangle by bringing two opposite edges together and press firmly to seal. Then bring the opposite corners of the triangle together and pinch to form a wonton bundle.
  3. Make the soup base: In a large pot, heat 8 cups of chicken broth over medium heat. Add soy sauce, sesame oil, grated ginger, and minced garlic. Stir to combine and bring the broth to a gentle simmer.
  4. Simmer the broth: Let the broth simmer gently for 5-7 minutes to infuse the flavors. Then add baby bok choy or spinach, and optional sliced mushrooms. Season with salt and pepper according to your taste.
  5. Cook the wontons: Carefully drop the prepared wontons into the simmering soup. Cook them for 4-5 minutes, or until the wontons float to the surface and the filling is cooked through.
  6. Serve: Ladle the soup into bowls, ensuring each serving contains plenty of wontons and vegetables. Garnish with sliced green onions and fresh cilantro. Serve the soup warm for a comforting meal.
