Instructions
- Heat the oil: Heat olive oil in a large skillet over medium heat to prepare for sautéing the vegetables.
- Sauté vegetables: Add the diced onion, red bell pepper, and jalapeño to the skillet. Cook for 3-4 minutes, stirring occasionally, until the vegetables are softened and fragrant.
- Add corn: Stir in the drained corn and cook for an additional 2-3 minutes, allowing the flavors to combine and the corn to warm through.
- Add creamy base: Reduce heat to low and add the softened cream cheese and sour cream to the skillet. Stir continuously until the mixture becomes creamy and the cream cheese melts completely.
- Season and add cheese: Mix in 1 1/2 cups of the shredded Colby Jack cheese along with the chili powder, garlic powder, paprika, salt, and pepper. Stir until the cheese melts and the dip is evenly combined.
- Prepare for baking: Pour the dip mixture into a baking dish, spreading it evenly. Sprinkle the remaining 1/2 cup of shredded Colby Jack cheese evenly over the top.
- Bake the dip: Place the dish in a preheated oven at 375°F (190°C) and bake for 15-20 minutes, or until the cheese on top is bubbly and golden brown.
