Description

This Hungarian Mushroom Soup is a creamy, comforting dish featuring sautéed mushrooms and onions infused with Hungarian paprika and dill. It’s thickened with a smooth milk and flour mixture, enriched with sour cream and a splash of lemon juice for brightness. Perfect for a cozy meal, it serves four and is ideally enjoyed with crusty bread.

Ingredients

Scale

Main Ingredients

  • 2 tablespoons butter
  • 1 large onion, chopped
  • 1 pound cremini or button mushrooms, sliced
  • 2 teaspoons Hungarian paprika
  • 1 teaspoon dried dill
  • 1 tablespoon soy sauce
  • 2 cups vegetable or chicken broth
  • 1 cup whole milk or half-and-half
  • 2 tablespoons all-purpose flour
  • ½ cup sour cream
  • 2 tablespoons lemon juice
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Sauté Onions: In a large pot, melt the butter over medium heat. Add the chopped onion and sauté for about 5 minutes until they become translucent, softening to build the soup’s base flavor.
  2. Cook Mushrooms: Add the sliced mushrooms to the pot and cook for 8 to 10 minutes, stirring occasionally, until the mushrooms release their juices and start to brown slightly.
  3. Add Spices and Soy Sauce: Stir in Hungarian paprika, dried dill, and soy sauce, and cook for an additional minute to let the spices bloom and deepen the flavor.
  4. Simmer with Broth: Pour in the vegetable or chicken broth and bring the mixture to a simmer. Cover the pot and cook for 10 minutes to allow flavors to meld.
  5. Thicken Soup: In a small bowl, whisk the flour into the milk until smooth. Gradually stir this mixture into the simmering soup. Continue to simmer for another 5 minutes, stirring occasionally, until the soup thickens slightly.
  6. Finish the Soup: Reduce the heat to low. Stir in the sour cream and lemon juice gently to enrich and brighten the soup. Season with salt and pepper to taste.
  7. Serve: Remove from heat, garnish with chopped fresh parsley, and serve warm with crusty bread for a complete and satisfying meal.

Notes

  • Use cremini mushrooms for a richer flavor or button mushrooms for a milder taste.
  • For a vegetarian version, use vegetable broth instead of chicken broth.
  • Adjust the amount of paprika according to your spice preference.
  • The lemon juice adds a subtle tang that enhances the creaminess; do not skip this step.
  • Serve with crusty bread to soak up the delicious soup.
