Description

These Irresistible Keto Philly Cheesesteak Roll Ups are a delicious low-carb twist on the classic sandwich, featuring melted provolone cheese wraps filled with savory sautéed ribeye steak, bell peppers, onions, and mushrooms. Perfect for a quick, satisfying keto-friendly meal that’s both flavorful and easy to prepare.

Ingredients

Scale

Cheese Wraps

  • 8 thin slices provolone cheese
  • 4 slices cream cheese, softened

Filling

  • 1 pound thinly sliced ribeye steak or shaved beef
  • 1 tablespoon olive oil
  • 1 small green bell pepper, thinly sliced
  • 1 small onion, thinly sliced
  • 1/2 cup sliced mushrooms
  • 2 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning

Instructions

  1. Preheat and Prepare Cheese Wraps: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper. Arrange the provolone cheese slices in slightly overlapping pairs to create 4 rectangles. Bake for 5 to 7 minutes until the cheese is melted and bubbly but not browned. Remove and let cool slightly until firm enough to handle.
  2. Sauté Vegetables: While the cheese bakes, heat olive oil in a skillet over medium-high heat. Add sliced onions, bell peppers, and mushrooms. Cook for 4 to 5 minutes until softened. Stir in minced garlic and cook for an additional 30 seconds.
  3. Cook the Beef: Add the thinly sliced ribeye or shaved beef to the skillet along with salt, black pepper, and Italian seasoning. Cook for 4 to 6 minutes, stirring occasionally, until the beef is browned and cooked through. Remove from heat and drain any excess liquid.
  4. Assemble Roll Ups: Spread a thin layer of softened cream cheese over each baked provolone cheese rectangle. Divide the beef and vegetable mixture evenly among them. Carefully roll each rectangle into a tight log, using a spatula to assist if necessary. Place seam-side down on the parchment to set.
  5. Serve: Allow the roll ups to cool slightly to set before slicing in half. Serve warm for the best taste and texture.

Notes

  • Use parchment paper to prevent cheese from sticking and to make rolling easier.
  • For added heat, include jalapeño slices or sprinkle red pepper flakes in the filling.
  • These roll ups are best served warm but can be gently reheated in the oven if needed.
