Description

This Italian Grinder Salad is a delicious and satisfying chopped salad inspired by the flavors of an Italian grinder sandwich. Packed with romaine and iceberg lettuce, pepperoncini, cherry tomatoes, red onion, deli meats, cheese, and a zesty dressing, this salad is perfect as a main dish or a side.

Main Salad:

  • 2 cups chopped romaine lettuce
  • ½ cup shredded iceberg lettuce
  • ½ cup sliced pepperoncini
  • ½ cup cherry tomatoes (halved)
  • ¼ red onion (thinly sliced)
  • 4 slices deli ham (chopped)
  • 4 slices salami (chopped)
  • 4 slices provolone cheese (chopped)

Dressing:

  • ¼ cup mayonnaise
  • 1 tablespoon red wine vinegar
  • 1 teaspoon Dijon mustard
  • ½ teaspoon garlic powder
  • ½ teaspoon dried oregano
  • Salt and black pepper to taste

Instructions

  1. Main Salad: In a large mixing bowl, combine the romaine and iceberg lettuces, pepperoncini, cherry tomatoes, red onion, ham, salami, and provolone cheese.
  2. Dressing: In a separate small bowl, whisk together the mayonnaise, red wine vinegar, Dijon mustard, garlic powder, oregano, salt, and pepper until smooth.
