Description

Warm up with a comforting bowl of Italian Sausage Soup with Spinach and Pasta. This hearty soup is packed with flavorful Italian sausage, nutritious vegetables, tender pasta, and fresh spinach, all simmered together in a savory broth. It’s a satisfying meal that’s perfect for chilly days.

Ingredients

Scale

Italian Sausage Soup:

  • 1 pound Italian sausage (mild or hot), casings removed
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 carrots, diced
  • 2 celery ribs, diced
  • 3 garlic cloves, minced

Soup Base:

  • 6 cups chicken broth
  • 1 (14.5-ounce) can diced tomatoes
  • 1 (15-ounce) can cannellini beans, drained and rinsed
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon crushed red pepper flakes (optional)
  • 1 1/2 cups small pasta (such as ditalini or elbow)
  • 4 cups fresh baby spinach
  • salt and black pepper to taste
  • grated Parmesan cheese for serving

Instructions

  1. Cook the Sausage: In a large pot, brown the Italian sausage in olive oil until fully cooked.
  2. Sauté Vegetables: Add onion, carrots, and celery, cooking until softened. Stir in garlic.
  3. Add Ingredients: Pour in broth, tomatoes, beans, herbs, and red pepper flakes. Simmer for 10 minutes.
  4. Cook Pasta: Stir in pasta and cook until tender.
  5. Finish Soup: Add spinach, season with salt and pepper. Serve hot with Parmesan.

Notes

  • For a creamier soup, add heavy cream at the end.
  • Substitute kale for spinach or turkey sausage for a lighter version.
  • Add extra broth to leftovers as pasta will absorb liquid.
