Jalapeño Cheese Mixture

  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon smoked paprika

For Toasting

  • 2 tablespoons butter, softened (for toasting buns)

Instructions

  1. Prepare the Jalapeño Cheese Mixture: In a medium bowl, combine the softened cream cheese, shredded cheddar cheese, shredded Monterey Jack cheese, finely chopped jalapeños (seeded), garlic powder, and smoked paprika. Mix thoroughly until all ingredients are well incorporated and the mixture is smooth.
  2. Toast the Buns: Preheat a skillet or griddle over medium heat. Slice the sandwich rolls in half and spread softened butter evenly on the cut sides. Place the buns cut side down on the skillet and toast them until golden brown, about 1–2 minutes. Remove and set aside.
  3. Assemble the Sandwiches: Spread a generous amount of the jalapeño cheese mixture onto the bottom half of each toasted bun. Layer two slices of crispy bacon on top of the cheese spread. If desired, add pickled jalapeños for extra tang and heat. Place the top half of the bun over the fillings.
  4. Heat the Sandwiches: Return the assembled sandwiches to the skillet. Press down lightly with a spatula and cook for 1–2 minutes per side, or until the cheese filling is warm and melted and the buns are heated through.
  5. Serve: Remove the sandwiches from the skillet and serve immediately while warm and melty.
