For the Jerk Wings:

  • 2 pounds chicken wings (drums and flats)
  • 2 tablespoons jerk seasoning (store-bought or homemade)
  • 1 tablespoon olive oil
  • 1 tablespoon lime juice

For the Rotel Pasta:

  • 8 ounces penne or elbow macaroni
  • 1 tablespoon olive oil
  • 1/2 pound ground beef or turkey
  • 1/2 cup chopped onion
  • 1 (10-ounce) can Rotel diced tomatoes with green chilies
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup heavy cream or milk
  • Salt and pepper to taste

For the Green Beans:

  • 12 ounces fresh or frozen green beans
  • 1 tablespoon butter
  • 1 clove garlic (minced)
  • Salt and pepper to taste

Instructions

  1. To Make the Jerk Wings: Preheat oven to 400°F. Pat wings dry and toss with jerk seasoning, olive oil, and lime juice until well coated. Arrange on a baking sheet lined with parchment paper or a wire rack. Bake for 40–45 minutes, flipping halfway, until golden brown and cooked through. Broil for 2–3 minutes at the end for extra crispiness if desired.
  2. To Make the Rotel Pasta: Cook pasta according to package directions; drain and set aside. In a large skillet, heat olive oil over medium heat. Add ground meat and chopped onion, cooking until browned. Stir in Rotel tomatoes (with juice) and simmer for 5 minutes. Reduce heat and stir in cheese and cream until creamy and thickened. Add cooked pasta and toss to coat. Season with salt and pepper to taste.
  3. To Make the Green Beans: Steam or boil green beans until just tender (about 5 minutes), then drain. In a skillet, melt butter over medium heat. Add garlic and sauté for 30 seconds. Add green beans and toss to coat. Season with salt and pepper and cook for 1–2 more minutes.

Notes

  • Use boneless wings or chicken tenders for easier eating.
  • For a spicier pasta, use Hot Rotel or add crushed red pepper.
  • Green beans can also be oven-roasted for added depth of flavor.
