Main Dish:
- 1 box Jiffy corn muffin mix
- 1 large egg
- â…“ cup milk
- 1 pound ground beef or ground turkey
- 1 packet taco seasoning
- ½ cup water
- 1 can (15 oz) black beans (drained and rinsed)
- 1 cup corn kernels (fresh, frozen, or canned and drained)
- 1 cup shredded cheddar cheese
- ½ cup salsa or enchilada sauce

Instructions
- Preheat oven and prepare baking dish: Preheat oven to 375°F (190°C) and grease a 9×9-inch baking dish or similar casserole pan.
- Cook the taco meat: Brown the ground beef in a skillet over medium heat. Drain any excess fat and stir in taco seasoning and water. Simmer for 2–3 minutes. Add black beans, corn, and salsa. Cook for another 2 minutes.
- Prepare the cornbread mix: In a separate bowl, mix Jiffy cornbread mix, egg, and milk according to package instructions.
- Assemble and bake: Spread the taco meat mixture in the baking dish. Sprinkle cheese over the meat, then pour the cornbread batter on top. Bake for 25–30 minutes until golden and cooked through. Let rest before serving with toppings.
Notes
- For a spicier version, add chopped jalapeños into the meat or cornbread batter.
- Add a layer of cheese between the meat and cornbread for extra cheesiness.
