Instructions

  1. Brown the Beef: Heat olive oil in a large pot or Dutch oven over medium heat. Add the beef stew meat and sear until browned on all sides, about 5 to 7 minutes. Remove the beef from the pot and set aside.
  2. Sauté Vegetables: In the same pot, add chopped onion and cook for 3 minutes until softened. Add minced garlic and sliced mushrooms, cooking for an additional 5 minutes until the mushrooms release their moisture and start to brown.
  3. Add Beef and Broth: Return the browned beef to the pot. Pour in the beef broth, then add dried thyme, dried rosemary, and soy sauce or coconut aminos. Bring the mixture to a boil.
  4. Simmer the Soup: Reduce the heat to low, cover the pot, and let it simmer for 40 to 45 minutes, until the beef becomes tender and flavorful.
  5. Finish with Cream: Stir in the heavy cream and continue simmering uncovered for another 5 to 10 minutes to allow the soup to thicken slightly and develop a creamy texture.
