Ingredients
Scale
Meat Base
- 1 lb ground beef (80/20 for juiciness)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- Salt and pepper, to taste
Cauliflower
- 4 cups cauliflower florets (fresh preferred), steamed and chopped into tater tot-sized pieces
Cheese Sauce
- 4 oz cream cheese
- ½ cup heavy cream
- 1 ½ cups shredded cheddar cheese
Topping
- ½ cup almond flour or crushed pork rinds (for crispy topping)
Instructions
- Prepare the Meat Base: Brown the ground beef in a skillet over medium heat until fully cooked and browned. Add diced onion and minced garlic; cook until fragrant and soft. Stir in Worcestershire sauce, salt, and pepper. Remove from heat once combined.
- Cook the Cauliflower: Steam the cauliflower florets until tender but not mushy. Chop into smaller pieces about the size of tater tots to mimic the classic texture.
- Make the Cheese Sauce: In a saucepan, gently warm the heavy cream and cream cheese, stirring until smooth and creamy. Gradually add shredded cheddar cheese, stirring constantly to create a velvety cheese sauce.
- Combine Ingredients: In a large bowl, mix the browned meat, chopped cauliflower, and cheese sauce until everything is evenly coated and combined well.
- Assemble and Bake: Transfer the mixture to a greased baking dish. Evenly sprinkle the almond flour or crushed pork rind topping over the surface for a crunchy crust. Bake in a preheated oven at 375°F (190°C) for 20–25 minutes or until bubbly and golden on top.
Notes
- Use fresh cauliflower for best texture and flavor.
- Almond flour is a great keto-friendly option but crushed pork rinds offer extra crispiness and flavor.
- Make sure the cauliflower is steamed just until tender to avoid a mushy casserole.
- This casserole can be stored in the refrigerator for up to 3 days and reheated in the oven for best results.
- For added flavor, consider sprinkling some paprika or fresh herbs on top before baking.
