- 8 oz broken lasagna noodles
- 15 oz ricotta cheese
- 1 cup shredded mozzarella cheese

Instructions
- Brown the Meat: In a large pot, heat olive oil over medium heat. Add the ground beef or Italian sausage and cook for 7-10 minutes, stirring occasionally, until fully browned and cooked through. Drain any excess fat to keep the soup from becoming greasy.
- Sauté Onion and Garlic: Add the chopped onion and minced garlic to the pot. Sauté for about 3-5 minutes until the onion becomes translucent and the garlic is fragrant, being careful not to burn the garlic.
- Add Tomatoes and Broth: Stir in the diced tomatoes with their juice and the tomato sauce. Pour in the 4 cups of low-sodium chicken broth. Bring the mixture to a boil over medium-high heat, then reduce the heat and let it simmer gently for 20 minutes to develop the flavors.
- Cook the Lasagna Noodles: Add the broken lasagna noodles to the simmering soup. Continue to cook for 10-15 minutes, stirring occasionally, until the noodles are tender but not mushy.
- Prepare Cheese Mixture and Serve: In a small bowl, combine the ricotta cheese and shredded mozzarella cheese until well mixed. Ladle the soup into bowls and top each serving with a generous spoonful of the cheese mixture. Garnish with fresh basil leaves for added flavor and a fresh, aromatic touch.
