Description

This Lazy Chicken Parmesan Grilled Cheese is a quick and delicious twist on classic chicken parmesan, combining tender cooked chicken, marinara sauce, and melted mozzarella and Parmesan cheeses sandwiched between buttery toasted bread. Ready in just 18 minutes, this sandwich makes a comforting and satisfying meal perfect for lunch or a cozy dinner.

Ingredients

Scale

Sandwich

  • 2 slices of bread (your choice, preferably thick-cut)
  • 1 boneless, skinless chicken breast, cooked and sliced thin
  • 1/2 cup marinara sauce (store-bought or homemade)
  • 1/2 cup shredded mozzarella cheese
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon butter (for toasting)
  • 1 teaspoon dried oregano (optional)
  • Salt and pepper to taste

Instructions

  1. Prepare the bread: Heat a skillet over medium heat and butter one side of each slice of bread to ensure a golden, crispy crust when grilled.
  2. Start grilling the sandwich base: Place one slice of bread, butter side down, on the preheated skillet to start cooking the bottom layer.
  3. Add sauce and chicken: Spread 2 tablespoons of marinara sauce evenly over the bread in the skillet, then layer the thinly sliced cooked chicken breast over the sauce.
  4. Add cheeses and seasoning: Sprinkle shredded mozzarella cheese and grated Parmesan cheese over the chicken, then season with a pinch of dried oregano, salt, and pepper according to your taste.
  5. Top the sandwich: Place the second slice of bread on top, butter side facing up to prepare for grilling the top side.
  6. Grill until golden and melted: Cook the sandwich for 3-4 minutes on each side, flipping carefully, until the bread is a beautiful golden brown and the cheeses have melted thoroughly.
  7. Serve: Remove the grilled sandwich from the skillet and allow it to cool for a minute before slicing. Serve with extra marinara sauce for dipping to enhance the flavors.

Notes

  • Use thick-cut bread for better structure and to hold the fillings well.
  • Cook the chicken breast fully before assembling the sandwich to save time and ensure it’s safe to eat.
  • Feel free to add fresh basil or spinach inside the sandwich for extra flavor and nutrition.
  • For a crispier crust, use a cast-iron skillet or a non-stick pan with even heat distribution.
  • Leftover marinara sauce can be refrigerated and used for pasta or as a dip for other dishes.
