Description

A comforting and hearty soup made with leftover turkey, vegetables, and noodles in a flavorful broth, perfect for a cozy meal after the holidays.


Ingredients

For the Soup:

  • 2 tablespoons olive oil
  • 1 small onion, chopped
  • 2 carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 3 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 6 cups turkey or chicken broth
  • 2 cups leftover cooked turkey, shredded or chopped
  • 1 cup egg noodles or cooked rice
  • 1 tablespoon chopped fresh parsley (optional)
  • juice of 1/2 lemon (optional)

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion, carrots, and celery, and sauté for 5–6 minutes until vegetables begin to soften.
  2. Stir in garlic, thyme, rosemary, salt, and pepper, and cook for another minute until fragrant.
  3. Pour in the broth and bring to a boil. Reduce heat to a simmer and cook for 10–12 minutes until the vegetables are tender.
  4. Add the leftover turkey and noodles (or rice), and simmer for another 5–7 minutes until heated through.
  5. Stir in parsley and lemon juice if using. Taste and adjust seasoning as needed. Serve hot.

Notes

  • This soup freezes well and can be made with chicken instead of turkey.
  • Add spinach or kale for extra greens, or a pinch of red pepper flakes for heat.
