  • 1 1/4 cups all-purpose flour
  • 1/2 cup unsalted butter, cold and cubed
  • 1/4 cup powdered sugar
  • 1/4 teaspoon salt
  • 1–2 tablespoons ice water

For the lemon filling:

  • 1/2 cup fresh lemon juice (about 2–3 lemons)
  • 1 tablespoon lemon zest
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup heavy cream
  • 2 tablespoons all-purpose flour

For the topping:

  • 1 1/2 cups mixed fresh berries (such as strawberries, blueberries, raspberries)
  • 1 tablespoon apricot jam (optional, for glaze)

Instructions

  1. Prepare the crust: Preheat the oven to 350°F. In a food processor, pulse together flour, powdered sugar, and salt. Add cold butter and pulse until the mixture resembles coarse crumbs. Add ice water 1 tablespoon at a time, pulsing just until the dough begins to come together. Press the dough into a tart pan, prick with a fork, and bake until golden.
  2. Make the lemon filling: Whisk together lemon juice, lemon zest, sugar, eggs, cream, and flour until smooth. Pour into the pre-baked crust and bake until set.
  3. Add the topping: Chill the tart, then top with fresh berries. Optionally, glaze with warmed apricot jam.
