Primary Ingredients
- 2 tablespoons lime zest
- ½ cup lime juice (freshly squeezed, approx 5-6 limes)
- â…“ cup fresh mint leaves
- 1 large avocado
- 3.5 oz coconut yoghurt (can be substituted with coconut cream or coconut milk)
- 5 tablespoons pure maple syrup
- 3 tablespoons white rum (optional)
- 7 oz coconut cream (or full fat canned coconut milk)
Instructions
- Blend Ingredients: Add all ingredients except the coconut cream to your blender and blend until smooth and evenly mixed, ensuring the avocado and mint leaves are fully incorporated.
- Add Coconut Cream: Add the coconut cream to the blender and blend again until the mixture is creamy and well combined.
- Pour and Freeze: Pour the mixture into ice cream molds, insert wooden sticks into each cavity, and freeze for at least 5 hours or until completely set to achieve a firm popsicle texture.
- Unmold Popsicles: To remove the popsicles, briefly run the molds under warm water for a few seconds to loosen them, then gently push the popsicles out using the wooden sticks.
- Storage: Store the popsicles in an airtight container in your freezer for up to one month to maintain freshness and flavor.
Notes
- You can substitute the coconut yoghurt with coconut cream or coconut milk depending on your texture preference.
- White rum is optional and can be omitted for a non-alcoholic version.
