Description

Refreshing and creamy Lime Popsicles made with fresh lime zest, avocado, mint leaves, and coconut cream, sweetened with pure maple syrup and optionally spiked with a hint of white rum. These dairy-free popsicles are smooth, tangy, and perfect for a cool summer treat.

Primary Ingredients

  • 2 tablespoons lime zest
  • ½ cup lime juice (freshly squeezed, approx 5-6 limes)

  • 1 large avocado
  • 3.5 oz coconut yoghurt (can be substituted with coconut cream or coconut milk)
  • 5 tablespoons pure maple syrup
  • 3 tablespoons white rum (optional)
  • 7 oz coconut cream (or full fat canned coconut milk)


Instructions

  1. Blend Ingredients: Add all ingredients except the coconut cream to your blender and blend until smooth and evenly mixed, ensuring the avocado and mint leaves are fully incorporated.
  2. Add Coconut Cream: Add the coconut cream to the blender and blend again until the mixture is creamy and well combined.
  3. Pour and Freeze: Pour the mixture into ice cream molds, insert wooden sticks into each cavity, and freeze for at least 5 hours or until completely set to achieve a firm popsicle texture.
  4. Unmold Popsicles: To remove the popsicles, briefly run the molds under warm water for a few seconds to loosen them, then gently push the popsicles out using the wooden sticks.
  5. Storage: Store the popsicles in an airtight container in your freezer for up to one month to maintain freshness and flavor.

Notes

  • You can substitute the coconut yoghurt with coconut cream or coconut milk depending on your texture preference.
  • White rum is optional and can be omitted for a non-alcoholic version.
