Ingredients
Tater Tots:
1 (28-ounce) bag frozen tater tots, olive oil spray,
Beef Rib Meat:
1½ cups cooked beef rib meat (shredded), 2 tablespoons barbecue sauce,
Cheese Blend:
1 cup shredded cheddar cheese, ½ cup Monterey Jack cheese,
Toppings:
¼ cup sour cream, 2 green onions (sliced), ¼ cup pickled jalapeños (optional), salt and pepper to taste
Instructions
- Preheat the Oven: Preheat the oven to 425°F (218°C).
- Bake Tater Tots: Arrange tater tots on a baking sheet, spray with olive oil, and bake for 25–30 minutes until crispy.
- Prepare Beef Rib Meat: Shred and warm cooked beef rib meat with barbecue sauce in a skillet.
- Melt Cheeses: Sprinkle cheddar and Monterey Jack cheese over tots, bake for 5 minutes until melted.
- Assemble: Top tots with beef rib meat, sour cream, green onions, and pickled jalapeños.
- Season and Serve: Season with salt and pepper, and serve hot.
