Description

These Loaded Hasselback Potatoes are a delicious and visually impressive dish featuring thinly sliced, crispy roasted potatoes loaded with a seasoned vegan butter mixture, melted vegan cheddar cheese, and topped with creamy vegan sour cream, smoky bac’n bits, and fresh green onions. Perfect as a hearty side or main course, this recipe combines comforting flavors with a satisfying crunch.

Ingredients

Scale

Potatoes

  • 4 medium russet or Yukon gold potatoes

Seasoned Butter Mixture

  • 1/4 cup softened vegan butter
  • 4 cloves minced garlic
  • 1 teaspoon nutritional yeast
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon fresh cracked pepper

Toppings

  • 8 ounces vegan cheddar cheese
  • Vegan sour cream (for serving)
  • Crumbled bac’n bits (for serving)
  • Chopped green onion or chives (for garnish)

Instructions

  1. Preheat oven: Preheat your oven to 425°F (220°C) to ensure it’s hot and ready to crisp the potatoes perfectly.
  2. Prepare potatoes: Place each potato between two chopsticks or wooden spoons to avoid slicing all the way through. Make thin, even slices about 1/8 inch apart across each potato, allowing the slices to fan out during baking.
  3. Make butter mixture: In a small bowl, combine the softened vegan butter, minced garlic, nutritional yeast, smoked paprika, onion powder, kosher salt, and freshly cracked pepper. Mix well until fully incorporated.
  4. Bake potatoes: Arrange the potatoes on a prepared baking sheet. Brush them generously with the seasoned vegan butter mixture, making sure to get some inside the slices. Bake for 45-55 minutes, or until the potatoes are tender inside and the edges are crispy and golden brown.
  5. Add cheese: Remove the baking sheet from the oven and sprinkle the vegan cheddar cheese evenly over each potato, especially between the slices. Return to the oven and bake for an additional 5-10 minutes until the cheese is melted, bubbly, and slightly browned.
  6. Serve: Take the potatoes out of the oven and let them cool slightly for safe handling. Top with vegan sour cream, crumbled bac’n bits, and chopped green onions or chives for added flavor and presentation. Serve hot as a main dish or a delicious side.

Notes

  • Using chopsticks or wooden spoons as guides helps prevent slicing the potato completely through, keeping it intact while allowing flavors to penetrate.
  • Vegan cheddar cheese can be substituted with any favorite vegan melting cheese.
  • The seasoned butter mixture can be prepared ahead and stored in the fridge for convenience.
  • Adjust seasoning to taste by increasing or decreasing salt, paprika, or garlic as preferred.
  • For crispier edges, bake on a wire rack set over the baking sheet to allow air circulation.
