Description

Loubieh Bi Zeit is a classic Lebanese dish featuring fresh green beans simmered in a rich and flavorful tomato and garlic sauce. This vibrant vegetarian side dish brightens any meal with its aromatic blend of garlic, olive oil, and ripe tomatoes, offering both comfort and a healthy dose of vegetables.

Ingredients

Scale

Vegetables

  • 2 pounds fresh green beans, trimmed and cut into 2-inch pieces
  • 3 ripe tomatoes, diced
  • 1 large onion, sliced into wedges
  • 10 cloves garlic (5 whole, 5 sliced)

Other Ingredients

  • 1 teaspoon salt
  • 2 tablespoons olive oil
  • 2 tablespoons tomato sauce
  • 1 cup water

Instructions

  1. Prepare the Vegetables: Wash and trim the green beans, cutting them into 2-inch pieces; dice the tomatoes; slice the onion into wedges; leave 5 garlic cloves whole and slice the other 5 cloves into round pieces.
  2. Sauté Aromatics: Heat olive oil in a large pan over medium heat. Add the whole garlic cloves and sliced onions and sauté until the onions soften and become translucent, about 5 minutes.
  3. Add Tomatoes: Stir in diced tomatoes and tomato sauce into the pan. Cook the mixture for 2-3 minutes until well combined and aromatic.
  4. Combine Green Beans: Add the trimmed green beans and 1 cup of water to the pan. Season with salt and stir everything together evenly.
  5. Simmer the Dish: Cover the pan and let it simmer gently for 20-25 minutes, or until the green beans are tender, ensuring the flavors meld beautifully.

Notes

  • Use fresh, crisp green beans for the best texture and flavor.
  • Adjust the salt to taste if you prefer a less salty dish.
  • Serve warm or at room temperature as a side dish with rice or flatbread.
  • Leftovers can be refrigerated and taste even better the next day as flavors deepen.
