Description

Cool off with these delicious Mango Lassi Popsicles, a frozen twist on the classic Indian yogurt drink. Creamy, fruity, and refreshing, they are perfect for hot summer days.

Main Ingredients:

  • 2 cups ripe mango chunks (fresh or frozen and thawed)
  • 1 cup plain Greek yogurt
  • 1/2 cup milk (dairy or non-dairy)
  • 23 tablespoons honey or maple syrup (to taste)

Optional:

  • 1/2 teaspoon ground cardamom
  • 1 teaspoon lemon or lime juice (optional, for brightness)

Instructions

  1. Blend Ingredients: Add mango, Greek yogurt, milk, honey, cardamom, and lemon or lime juice (if using) to a blender. Blend until smooth and creamy.
  2. Adjust Sweetness: Taste and adjust sweetness if needed.
  3. Fill Mold: Pour the mixture into popsicle molds, leaving space at the top for expansion. Insert sticks.
  4. Freeze: Freeze for at least 4–6 hours, or until completely solid.
  5. Release Popsicles: To release, run the molds under warm water for a few seconds before pulling out the popsicles.

Notes

  • For a swirl effect, layer the mango mixture with extra yogurt before freezing.
  • Use canned mango pulp if fresh mangoes aren’t in season.
