Cool off with these delicious Mango Lassi Popsicles, a frozen twist on the classic Indian yogurt drink. Creamy, fruity, and refreshing, they are perfect for hot summer days.

Main Ingredients:
- 2 cups ripe mango chunks (fresh or frozen and thawed)
- 1 cup plain Greek yogurt
- 1/2 cup milk (dairy or non-dairy)
- 2–3 tablespoons honey or maple syrup (to taste)
Optional:
- 1/2 teaspoon ground cardamom
- 1 teaspoon lemon or lime juice (optional, for brightness)
Instructions
- Blend Ingredients: Add mango, Greek yogurt, milk, honey, cardamom, and lemon or lime juice (if using) to a blender. Blend until smooth and creamy.
- Adjust Sweetness: Taste and adjust sweetness if needed.
- Fill Mold: Pour the mixture into popsicle molds, leaving space at the top for expansion. Insert sticks.
- Freeze: Freeze for at least 4–6 hours, or until completely solid.
- Release Popsicles: To release, run the molds under warm water for a few seconds before pulling out the popsicles.
Notes
- For a swirl effect, layer the mango mixture with extra yogurt before freezing.
- Use canned mango pulp if fresh mangoes aren’t in season.
- Add a pinch of turmeric for color and added nutrients.
