Ingredients

White Fish Fillets:

4 fillets

Olive Oil:

2 tablespoons

Cherry Tomatoes (halved):

1 pint

Kalamata Olives (pitted and halved):

1/2 cup

Red Onion (thinly sliced):

Garlic Cloves (minced):

Dried Oregano:

1/2 teaspoon

Crushed Red Pepper Flakes (optional):

1/4 teaspoon

Lemon Juice:

juice of 1 lemon

Salt and Black Pepper:

Fresh Parsley or Basil for garnish:

Instructions

  1. Preheat the oven: Preheat the oven to 400°F. Grease a 9×13-inch baking dish or line with parchment paper.
  2. Season fish: Place fish fillets in the dish, season with salt and pepper on both sides.
  3. Prepare tomato mixture: In a bowl, mix tomatoes, olives, red onion, garlic, oregano, red pepper flakes, and olive oil.
