  • 1 1/2 cups shredded Monterey Jack cheese

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole.
  2. Cook Beef and Onions: In a large skillet over medium heat, cook the ground beef and chopped onion until the beef is browned and onions are soft. Drain any excess grease for a less oily dish.
  3. Season Meat Mixture: Stir in the taco seasoning and water into the cooked beef mixture. Cook until it slightly thickens, enhancing the flavors.
  4. Mix in Soups and Vegetables: Remove the skillet from heat. Add diced tomatoes with green chilies, cream of mushroom soup, cream of chicken soup, sour cream, corn, diced green chilies, and half of the shredded cheddar and Monterey Jack cheeses. Mix thoroughly to combine all ingredients.
