Ingredients
Scale
Filling
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup ricotta cheese
- 1/4 cup green onions, finely chopped
- 1/4 cup fresh dill, chopped (or 1 tablespoon dried dill)
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Dough & Topping
- 1 package (1 lb) phyllo dough, thawed
- 1/2 cup unsalted butter, melted
- 1/4 cup honey
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C) and prepare a baking sheet by lining it with parchment paper to prevent sticking and ensure even baking.
- Prepare Filling: In a large mixing bowl, combine the chopped fresh spinach, crumbled feta cheese, ricotta cheese, finely chopped green onions, chopped dill, black pepper, and salt. Mix thoroughly until all ingredients are well incorporated to create a creamy and flavorful filling.
- Layer Phyllo Dough: Place one sheet of thawed phyllo dough on a clean surface and brush it lightly with melted butter. Place a second sheet on top and brush with more butter. Repeat this process until you have stacked 4 layers, ensuring each layer is brushed to keep the dough moist and flaky.
- Assemble Rolls: Spoon approximately 1/4 cup of the spinach and cheese filling along one edge of the layered phyllo dough. Carefully roll the dough tightly around the filling to form a log shape, sealing the edge to prevent filling from escaping during baking. Place the roll seam-side down on the prepared baking sheet.
- Repeat Rolls: Continue layering, filling, and rolling with the remaining phyllo dough and filling, arranging each roll on the baking sheet with some space between them to allow for even cooking.
- Butter Tops: Brush the tops of all the assembled rolls with the remaining melted butter to help achieve a golden, crispy crust during baking.
- Bake: Place the baking sheet in the preheated oven and bake the rolls for 25-30 minutes, or until they are golden brown and crispy to the touch.
- Warm Honey: While the rolls bake, gently warm the honey in a small saucepan over low heat until it becomes runny and easy to drizzle.
- Serve: Once baked, remove the rolls from the oven and immediately drizzle the warm honey over the top. Serve warm to enjoy the perfect balance of savory and sweet flavors.
Notes
- Ensure the phyllo dough is thawed but kept covered with a damp cloth to prevent it from drying out while working.
- You can substitute fresh dill with dried dill if fresh is unavailable.
- For a nuttier flavor, consider sprinkling toasted pine nuts or walnuts inside the filling.
- To make the rolls ahead, assemble and refrigerate them before baking; just add a few extra minutes to the baking time if chilled.
- The honey drizzle adds a lovely sweetness that complements the salty feta; adjust the amount to your taste preference.
