Description

A flavorful and easy-to-make Mongolian Ground Beef Noodles recipe combining tender noodles with savory ground beef cooked in a rich sauce, fresh vegetables, and a touch of heat, all garnished with toasted sesame seeds for a delightful Asian-inspired meal.

Ingredients

Scale

Noodles

  • 8 ounces of spaghetti or other noodles of your choice

Beef and Sauce

  • 1 pound ground beef
  • 1 tablespoon vegetable oil
  • 4 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 1/2 cup soy sauce
  • 1/4 cup brown sugar
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 1 teaspoon red pepper flakes (optional, for heat)

Vegetables and Garnish

  • 4 green onions, sliced
  • 2 cups shredded carrots
  • 1 cup snow peas, trimmed and halved
  • Sesame seeds for garnish

Instructions

  1. Cook the noodles: Cook the spaghetti or preferred noodles in a large pot of salted boiling water according to the package instructions until al dente. Drain and set aside.
  2. Brown the ground beef: Heat vegetable oil in a large pan or wok over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon, until it is browned and fully cooked.
  3. Sauté aromatics: Add the minced garlic and ginger to the cooked ground beef. Sauté for 1-2 minutes until fragrant to develop flavor.
  4. Prepare and add sauce: In a small bowl, whisk together soy sauce, brown sugar, rice vinegar, sesame oil, and red pepper flakes. Pour this sauce over the beef mixture in the pan.
  5. Simmer the beef in sauce: Let the beef simmer in the sauce for about 5 minutes so the flavors meld and the sauce slightly thickens.
  6. Add vegetables: Stir in sliced green onions, shredded carrots, and snow peas. Cook for an additional 3-5 minutes until the vegetables are tender yet crisp.
  7. Combine noodles and beef mixture: Toss the cooked noodles with the beef and vegetable mixture until everything is well coated and heated through.
  8. Garnish and serve: Remove from heat, garnish with sesame seeds, and serve immediately for a warm, satisfying meal.

Notes

  • You can substitute spaghetti with rice noodles or udon for different textures.
  • Adjust red pepper flakes to your preferred level of spiciness or omit for no heat.
  • For extra protein and flavor, add scrambled eggs or tofu as an alternative to ground beef.
  • Use low sodium soy sauce to reduce salt content if desired.
  • To save time, prepare sauce ingredients in advance and store in the refrigerator.
